for the operation of a French café at Hillel Street 35 – Jerusalem

THE PLACE

The Institut français de Jérusalem (IFJ) is a French public institution under the aegis of the Consulate General of France in Jerusalem which offers to its public, activities around French culture and language: cultural events (debates, film screenings, concerts…), theater, writing and photography workshops, etc.) as well as language courses. The Institut français invites French and local personalities from the world of culture and intellectual world. The Institut français works with local partners.

The IFJ – Romain Gary branch, located at Hillel Street 35 in Jerusalem, a media library, a multimedia reception and event space, and four classrooms. In a full year, the Institute welcomes an average of 2,000 people a year, of all ages, French-speaking or not.

 

THE OBJECTIVE

The Institute includes a café area on the ground floor, in the immediate vicinity of the library. This convivial space is intended to contribute to the attractiveness of the Institute. The provider will be able to participate in the Institute’s cultural program, to offer and to propose events. For its activities, the Institute will order in priority to the provider.

The temporary operating authorization for this space will be assigned to the partner establishment for a period of one year, renewable, with a view to turning it into a convivial café space, in the spirit of the Institute, with the possibility of offering light catering. The Institute will be attentive to offers that reflect the brand image of the Institut français by proposing a high-quality culinary offer, preferably promoting France’s gastronomic heritage, and if possible sustainable development (e.g. organic label).It’s worth noting that the majority of the Institut’s customers are kosher consumers.

 

SPACE AND OPERATING CONDITIONS

The operable space is located on the first floor, with a floor area of 70 m2, with possibility of an outdoor terrace. It is already equipped with a bar, a work surface, a sink and cupboards, as well as tables and chairs for 60 people.

The space is air-conditioned, and includes access to toilets (including disabled toilets).

The service provider will be able to use the IFJ’s sound equipment and projection screen.

The space is not licensed to serve alcohol.

The supplier undertakes to obtain the necessary permissions from the relevant local authorities necessary for the exercise of its activity.

 

Suggested opening hours:

– Sunday to Thursday, 8am to 7pm (extension possible on Thursday evenings and in the case of exceptional cultural events)

– Friday 8am to 3pm

– Closed on Saturday

The kitchen area is not equipped for food preparation:
The partner will have to prepare most of the food outside. Reheating will be possible for light catering.
The partner must provide all the necessary equipment: dishes, cutlery, glasses,
small electrical appliances.

Security and safety:
The premises are equipped with security cameras and fire-fighting equipment in accordance with local according to local standards.
The Partner must contribute to the salary of a security guard during opening hours.

 

EXPECTED SERVICE PROVIDER PROFILE

The candidate must have entrepreneurial or associative status, as well as a catering license.

The service provider, and any manager, must speak Hebrew and English. French will be appreciated.

The service provider’s priority should be to offer pastries and hot and cold drinks.

All proposals should be inspired by French gastronomy, emphasizing the various emphasis on the various origins, particularly local. Breakfast formulas, lunches, snacks and tastings for events.

The service provider will undertake to run the café with a view to sustainable development, in particular by avoiding the use of plastics or non-recyclable materials.

The service provider may make proposals to the management of the Institut français to develop awareness of new culinary trends (short circuits / Slow Food) and the evolution of gastronomy.

 

FINANCIAL CONDITIONS

– Rent: NIS 11,000 incl. VAT per month

– Utilities: a fixed charge of 4,500 NIS (share). This amount does not include any additional rental of equipment from IFJ to the service provider. Dedicated installations to the service provider (separate meters) will enable us to assess energy consumption.

– Profit-sharing: the service provider pays the IFJ 2% of its gross sales excluding VAT and tips.

– An extract of the company’s registration with the Registre des Commerces et des Sociétés (or a similar register extract, depending on the type of company) dated less than three (3) months old

– Copy of identity card/work permit

– Copy of registration certificate.
